Ouejadas(Portuguese Coconut Tarts) - cooking recipe

Ingredients
    3 beaten eggs
    1 1/2 c. sugar
    6 Tbsp. butter or margarine, melted
    1 Tbsp. lemon juice
    1/8 tsp. salt
    1 1/3 c. flaked coconut
    pastry for two crust pie
Preparation
    On floured surface, roll pastry to 1/8-inch thickness.
    Cut into 3 1/2-inch circles.
    Line 2 1/2-inch fluted tart shells with pastry circles; set aside.
    Combine eggs, sugar, butter, lemon juice and salt; stir in coconut.
    Spoon about 2 tablespoons filling into each shell.
    Place filled tart shells on baking sheet or shallow baking pan.
    Bake at 400\u00b0 for 20 minutes or until tops are golden.
    Cool.
    Remove tarts from pans.
    Makes about two dozen tarts.
