Fried Eggplant - cooking recipe

Ingredients
    1 large eggplant
    flour
    1/2 tsp. salt
    1/2 tsp. pepper
    2 eggs, beaten
    2 Tbsp. milk
    1 1/2 c. cracker meal
    2 Tbsp. grated cheese
Preparation
    Peel eggplant and cut into French fry size.
    Dust with salt and pepper and seasoned flour.
    Dip in beaten egg and milk.
    Roll eggplant in cracker meal.
    Fry in deep fat at 375\u00b0 for 4 to 5 minutes.
    Drain on absorbent towel.
    Sprinkle with seasoned salt and grated cheese.
