Spinach Souffle - cooking recipe

Ingredients
    1 pkg. frozen chopped spinach, thawed
    3 Tbsp. diet margarine
    3 Tbsp. all-purpose flour
    1 c. skim milk
    1/2 c. egg substitute or egg white
    1 Tbsp. chopped green onion
    1/4 tsp. grated nutmeg
    3 egg whites
Preparation
    Place thawed spinach in a strainer to drain.
    In
    a saucepan, melt margarine, stir in flour, add milk and cook, stirring constantly until thickened.
    Remove from
    heat.
    Beat egg substitute, add drained spinach, green onions, nutmeg and salt and pepper to taste.
    Add to flour mixture.
    In a large mixing bowl, beat egg whites until stiff.
    Carefully fold spinach mixture into the egg whites.
