Ingredients

2 (No. 303) cans whole beets
1 1/2 c. sugar
2/3 c. cider vinegar
1/2 c. beet juice
4 cloves (whole)
2 bay leaves
2 tsp. pickling spices
onions (optional)
Preparation

Boil sugar, vinegar, beet juice, spices and bay leaves.
Add beets and bring to a boil.
Seal in sterile jars.
Allow two weeks before opening.
If desired, add sliced onions one hour before serving.
