Braised Coot With Onions - cooking recipe

Ingredients
    coot, skinned and cut up
    bacon fat
    onions, sliced
    salt and pepper
Preparation
    Melt bacon fat in a frying pan and add enough sliced onions to cover the bottom.
    Add pieces of coot and salt and pepper to taste.
    Cover and cook on low heat with occasionally stirring until done.
