Fish Creole - cooking recipe

Ingredients
    1 (16 oz.) frozen or fresh fish fillets (any sweet white fish - orange roughy is good.)
    1 (16 oz.) can of tomatoes
    1 medium onion, diced
    1 medium green pepper, diced
    1/4 tsp. garlic powder
    3/4 c. uncooked regular or long grain rice
    1/2 c. water
    2 Tbsp. minced parsley
    1/2 tsp. salt
    1/2 tsp. paprika
    1/4 tsp Tabasco sauce
Preparation
    Thaw fish slightly and cut into bite size pieces.
    Combine all ingredients into a 2 quart casserole dish.
    Stir to break up tomatoes.
    Cover and bake at 375\u00b0 1 3/4 hours or until fish and rice are tender.
    Stir once after 45 minutes.
