Greek Chicken And Rice - cooking recipe
Ingredients

1/2 stick butter
4 chicken breasts
1 tsp. all-purpose Greek seasoning
1 bell pepper, chopped
1 stalk celery
1/2 c. onion, chopped
2 garlic cloves, finely minced
2 c. uncooked long grain rice
1 can cream of chicken soup
2 cans water or chicken broth
1/2 c. canned tomatoes with green chiles (Ro-Tel)
1 tsp. salt
dash of pepper
Preparation

Melt butter in large pan. Add chicken breasts mixed with Greek seasoning. Brown chicken breasts and simmer until hot. Place chicken in a 9 x 13-inch baking dish and set aside. Using the same pan, saute bell pepper, celery, onion and garlic until tender, about 2 minutes. To this mixture, add rice and remaining ingredients. Mix together and pour evenly over chicken. Bake, covered, in a preheated oven at 400\u00b0 for 45 minutes. Garnish and serve. Serves 4.
