Country Style Chile Sauce - cooking recipe

Ingredients
    4 qt. peeled, cored, chopped ripe tomatoes
    1 qt. chopped red or green peppers
    3 c. chopped onion (about 1 1/4 lb.)
    2 large celery ribs, chopped
    2 hot peppers (substitute hot red pepper)*
    2 large cloves garlic (I use garlic powder)
    3 c. cider vinegar
    1/4 c. pickling salt or non-iodized salt
    1/2 c. firmly packed brown sugar
    1/3 c. sugar
    1/2 c. light or dark corn syrup
    2 tsp. ground cloves
    2 tsp. ground cinnamon
    1 tsp. mustard seed
Preparation
    Combine tomatoes, peppers, onion, celery, hot pepper, garlic, vinegar, salt, both sugars and corn syrup in a large kettle. Bring to boiling.
    Lower heat and simmer, uncovered, stirring once in a while for 1 hour.
