Velveeta Cheese Potato Casserole - cooking recipe

Ingredients
    12 potatoes, cooked and diced
    1/2 c. yellow sweet peppers, chopped
    1 1/2 tsp. salt
    1 small jar pimentos (optional)
    1/2 c. onions, chopped
    1 c. oleo
    2 c. Velveeta cheese, cubed
    1/2 tsp. pepper
Preparation
    Place potatoes in greased 9 x 13-inch pan.
    Fry onions and peppers in butter until soft.
    Add pimentos and cheese; and over low heat, stir until cheese is melted.
    Pour over potatoes and bake at 375\u00b0 for 20 minutes or until brown.
