Orange Grove Muffins - cooking recipe

Ingredients
    2 c. cake flour or 1 3/4 c. all-purpose flour
    1/2 tsp. salt
    1/4 c. sugar
    2 tsp. baking powder
    2 eggs
    1/3 c. orange juice (fresh or frozen)
    1/3 c. milk
    2 Tbsp. butter, melted
    2 tsp. grated orange rind
    1/2 c. finely chopped pecans
    1 Tbsp. orange rind, grated for garnish
    2 Tbsp. pecans, chopped for garnish
Preparation
    In a bowl, sift together flour, salt, sugar and baking powder. In separate bowl, beat eggs with fork.
    Blend in milk, orange juice and melted butter.
    Add orange rind and pecans.
    Stir liquid mixture into dry ingredients with few strokes.
    Mixture will be lumpy.
    Do not overbeat.
    Spoon batter into well-greased muffin cups.
    Mix 1 tablespoon orange rind and 2 tablespoons pecans. Sprinkle a little on top each muffin if desired.
    Bake at 400\u00b0 for 20 minutes.
    Yield: 1 1/2 dozen.
