Mexican Cornbread - cooking recipe
Ingredients

1 c. self-rising cornmeal
1 c. buttermilk
1/3 c. oil
1 large onion, chopped
2 eggs
1 small can creamed corn
1 c. grated cheese (1/2 in mixture, 1/2 on top)
jalapeno peppers to taste (at least 3)
Preparation

Mix ingredients. Pour into a hot, greased iron skillet.
Top with 1/2 cup grated cheese. Bake at 350\u00b0 for 1 hour and 15 minutes. Super good with homemade vegetable soup.
