Ingredients

1 c. solid vegetable shortening
1 stick butter, softened
1 1/2 c. sugar
1 egg
1 (8 oz.) can crushed pineapple (undrained)
3 1/2 c. flour
1 tsp. baking soda
1 small can flaked coconut
Preparation

Cream together shortening, butter and sugar; beat in egg. Stir in pineapple. Cover and chill for 2 hours. Drop rounded teaspoonfuls on a lightly greased baking sheet. Bake at 400\u00b0 for 8 to 10 minutes or until golden brown. Makes about 5 dozen.
