Ingredients

2 c. unsifted all-purpose flour
3 tsp. baking powder
1/2 tsp. grated lemon rind (optional)
1/4 tsp. salt
3 eggs, separated
1 1/4 c. milk
3 tsp. butter or margarine, melted
1 c. mashed ripe bananas
Apricot-Banana Sauce
Preparation

Mix flour, baking powder, lemon rind and salt in a large bowl. Beat egg yolks, milk, melted butter and mashed bananas together in a bowl.
Add all at once to dry mixture; stir just enough to moisten.
Beat egg whites until stiff but not dry; fold into batter.
Let batter stand for 5 to 10 minutes to develop banana flavor.
Bake in waffle iron according to manufacturer's directions.
Serve with Apricot-Banana Sauce.
Yields 4 large waffles.
