Monterey Jack Triangles - cooking recipe
Ingredients

1/2 c. mayonnaise
1 tsp. chopped scallion
1 tsp. lime juice
1/8 tsp. lime zest
4 slices firm white bread
2 oz. Monterey Jack cheese with jalapeno pepper, cut into 1/4-inch thick slices
1 Tbsp. soft butter or margarine
1 tsp. chopped parsley
Preparation

Combine mayonnaise, scallion, lime juice and zest in small bowl.
Set aside.
Remove crust from bread.
Divide cheese between 2 slices of bread.
Top with bread.
Combine butter and parsley. Spread evenly on both sides of sandwiches.
Heat nonstick skillet to medium heat.
Cook sandwiches until brown.
Cool slightly.
Cut into triangles.
Serve with dipping sauce.
