Ingredients

2 1/2 c. self-rising flour
1/4 c. sugar
2 eggs
1 1/2 c. buttermilk
1/3 c. oil
Preparation

Separate eggs and save whites.
Mix the rest of the ingredients and beat until smooth.
Beat egg whites until stiff and fold in the batter.
Can be set in the refrigerator overnight and cooked the next day.
