Steamed Fish - cooking recipe

Ingredients
    2 fish
    salt and pepper
    ginger
    1/2 c. onion, chopped
    water
    2 c. peanut oil
Preparation
    Rinse cleaned fish.
    Leave skin on and trim fish to fit on rack
    placed
    in
    12-inch Dutch oven.
    Sprinkle generously with salt, pepper, ginger and onion.
    Add sufficient water to Dutch oven
    to
    steam
    fish for 1 hour.
    Remove fish and drain off liquid
    in Dutch oven.
    In a separate pot, heat peanut oil to very hot.
    Replace
    fish into Dutch oven.
    Pour heated oil over fish to sear.
    Serve.
