Oven Fried Eggplant - cooking recipe
Ingredients

1/3 c. fine dry bread crumbs
2 Tbsp. grated Parmesan cheese
1/4 tsp. salt
1/4 tsp. pepper
1 eggplant (3/4 lb.)
1/4 c. mayonnaise
Preparation

Combine bread crumbs, cheese, salt and pepper.
Peel eggplant, slice 1/4-inch thick.
Brush both sides of eggplant with mayonnaise.
Roll in crumb mixture.
Bake on a lightly greased baking sheet at 400\u00b0 for 12 minutes or until brown.
