Akara(Bean Cakes) - cooking recipe

Ingredients
    2 c. black-eyed peas
    1 chopped onion
    1 beaten egg
    1 tsp. salt
    1/4 tsp. pepper
    red pepper or Tabasco to taste
    oil to deep fry
Preparation
    Soak beans in water for 1 hour.
    Rub briskly to remove skins. Grind beans in blender or processor with enough water to make consistency like cake batter.
    Add remaining ingredients to bean mixture.
    Mix thoroughly and drop by teaspoonfuls into hot oil. Fry until golden brown.
    Remove from oil and drain on paper towels.
    Akara is best when served hot!
