Golden Corn And Chicken Chowder - cooking recipe

Ingredients
    2 large acorn squash
    1 tsp. vegetable oil
    1 medium onion, diced
    1/2 c. diced carrots
    1/2 c. diced celery
    1 large clove garlic, diced
    2 oz. Canadian bacon in strips
    2 (10 3/4 oz.) cans condensed golden corn soup
    2 soup cans water
    1 c. shredded cooked chicken
Preparation
    Cook squash; scoop squash out of shell.
    In 4-quart pan, heat oil; add onion, carrot, celery, garlic and bacon; cook 5 to 6 minutes until vegetables are crisp-tender.
    Add squash, soup, water and chicken; bring to boil.
    Reduce heat to low; simmer, covered, 15 to 20 minutes until vegetables are tender and flavors are blended.
    Makes 4 servings.
