Veggie Grits - cooking recipe

Ingredients
    1 c. quick cooking grits
    4 c. water
    11 oz. can drained Mexicorn
    9 oz. pkg. thawed and drained frozen spinach
    1 pkg. Taco Seasoning
    2 T. reduced fat butter
    2 c. reduced fat shredded cheddar
Preparation
    Follow package directions to cook 1 c. grits in 4 c. water. Combine cooked grits with remaining ingredients except 1 c. of cheese.
    Pour into a buttered 9 by 13-inch baking dish.
    Sprinkle remaining cheese on top.
    Bake for 30 minutes at 375 degrees. Serve hot.
