Salem Cross Oatmeal Bread - cooking recipe

Ingredients
    2 c. boiling water
    2 c. quick rolled oats
    1 Tbsp. butter
    1/2 c. molasses
    1 tsp. salt
    1 pkg. yeast, dissolved in 1/2 c. warm water
    2 eggs
    5 c. unbleached flour
Preparation
    Pour boiling water over oats and cool to lukewarm.
    To this, add butter, salt, molasses and dissolved yeast.
    Mix in the eggs and gradually add the flour, adding more if necessary.
    Knead for 10 minutes on floured board.
    Place in greased bowl. Cover and let rise until doubled.
    Shape into 2 loaves. Spread tops with butter and lightly sprinkle with oats.
    Cover and let rise again until doubled.
    Bake at 350\u00b0 for 40 to 45 minutes.
    Makes 2 loaves.
