Charleston She-Crab Soup - cooking recipe
Ingredients

1/4 c. butter
1 lb. crab meat
2 c. light cream
2 c. milk
ground mace, salt and pepper to taste
1/4 c. cracker crumbs
2 Tbsp. sherry
Preparation

Melt butter; add crab meat and saute for 1 to 2 minutes.
Stir in cream, milk and seasoning.
Thicken with cracker crumbs and let stand over lowest possible heat for a few minutes or until heated through thoroughly.
Do not boil.
Add sherry just before serving soup.
Makes 4 servings.
