Midwest Chowder - cooking recipe

Ingredients
    2 c. boiling water
    2 c. chopped potatoes
    1/2 c. carrot slices
    1/2 c. celery slices
    1/4 c. chopped onion
    1 1/2 tsp. salt
    1/4 tsp. pepper
    1/4 c. margarine
    1/4 c. flour
    2 c. milk
    2 1/2 c. (10 oz.) shredded sharp Cheddar cheese
    1 (17 oz.) can cream-style corn
    1 can stewed tomatoes
    1 can Ro-Tel
    1 lb. melted Velveeta
    2 c. cooked rice or more to taste
    2 to 3 c. chicken stock or more (until desired consistency)
Preparation
    Add cut up chicken.
    I use about 4 to 5 chicken breasts.
