Irish Potato Cake - cooking recipe
Ingredients

1 c. butter or margarine, softened
2 c. sugar
2 eggs
1 c. cold mashed potatoes
1 tsp. vanilla extract
2 c. all-purpose flour
1/4 c. baking cocoa
1 tsp. baking soda
1 c. milk
1 c. chopped nuts
Preparation

In a mixing bowl, cream butter and sugar until fluffy; add eggs, one at a time, beating well after each addition.
Blend in potatoes and vanilla.
In a separate bowl, combine flour, cocoa and baking soda and add alternately with milk to potato mixture, blending well after each addition.
Stir in nuts.
Pour into a greased 13 x 9 x 2-inch baking pan.
Bake at 350\u00b0 for 40 to 45 minutes or until cake tests done.
Cool on a wire rack.
Serve with a dollop of whipped cream or whipped topping on each piece.
