Black Bean Soup - cooking recipe

Ingredients
    2 lb. black beans (Turtle Beans)
    24 chicken bouillon cubes
    1 1/2 gal. hot water
    1 1/2 lb. smoked ham hocks
    4 c. chopped onions
    3 1/2 c. finely chopped green peppers
    6 Tbsp. vegetable oil
    2 1/4 tsp. ground cumin
    1 1/2 tsp. dried oregano
    1 1/2 tsp. crushed red peppers
    3 garlic cloves, pressed through garlic press
    1/2 tsp. red wine vinegar
    2 c. rice (uncooked)
Preparation
    Clean beans, soak overnight in water to cover (drain).
    Make chicken stock by dissolving bouillon cubes in 1 1/2 gallons hot water, in a 5 gallon pot.
    Add drained beans and ham shank.
    Bring to boil, reduce heat to medium and cook until beans are tender, about 1 1/2 hours.
