Potato Dumplings - cooking recipe

Ingredients
    3 lb. Russet potatoes
    2 eggs
    1 c. flour, divided
    1/2 c. dry bread crumbs
    1 tsp. salt
    1/4 tsp. ground nutmeg
    dash of pepper
    minced fresh parsley (optional)
Preparation
    Place potatoes in a saucepan and cover with water. Bring to a boil. Reduce heat; cover and simmer for 30 to 35 minutes or until tender. Drain well.
    Refrigerate for 2 hours or overnight.
    Peel and grated potatoes.
