Chicken Cacciatore - cooking recipe

Ingredients
    1/3 c. oil
    1 medium onion, chopped
    3 lb. chicken, cut up
    2 (8 oz.) cans whole tomatoes
    1 (6 oz.) can tomato paste
    1 can sliced mushrooms
    1/4 c. dry white wine
    1 clove garlic, minced
    1 tsp. salt
    1 bay leaf
    1 tsp. basil
    1/2 tsp. oregano
    1/4 tsp. pepper
Preparation
    Brown chicken lightly in oil.
    Remove chicken.
    Add onion and garlic; cook until tender.
    Add tomatoes, tomato paste, drained mushrooms, salt, basil, oregano, pepper and bay leaf; mix well. Return chicken to skillet.
    Cover pieces with sauce.
    Simmer, covered, for 45 minutes.
    Add wine; simmer, uncovered, 15 minutes longer.
    Remove bay leaf.
