Potato Pancakes - cooking recipe

Ingredients
    1/2 c. Egg Beaters
    3 c. cubed raw potatoes
    1/4 c. all-purpose flour
    1/8 tsp. ground white pepper
    2 tsp. margarine (unsalted if desired)
    applesauce (if desired)
Preparation
    In a blender container, place Egg Beaters, potatoes, onion, flour and pepper.
    Blend until the mixture is evenly rough in consistency.
    Melt 1 teaspoon margarine on hot griddle for every two pancakes; pour 1/4 cup batter onto hot griddle for each pancake.
    Fry on both sides until well browned, about 3 minutes per side.
    Serve hot with applesauce, if desired.
