Chilled Cherry Soup - cooking recipe
Ingredients

1 1/2 lb. cherries, halved and pitted
1/2 c. sugar
1 pt. double or heavy cream
1 Tbsp. flour
1/2 c. red wine
1 lemon
1 tsp. salt
1 cinnamon stick
2 cloves
6 1/2 oz. water
whipped cream
Preparation

Cook the cloves, salt, sugar, cinnamon and the juice of the lemon for 1/2 hour in the water.
Drain, reserving the liquid.
Add the wine.
Blend the flour well with the cream and add to the liquid.
Bring to the boil.
Add the cherries, reserving some for garnish.
Bring to the boil again.
Serve chilled.
Decorate with whipped cream and cherries.
Serves 5.
