Jan'S Rice Salad - cooking recipe

Ingredients
    3/4 c. uncooked rice
    1 1/2 c. chicken broth
    1/2 c. green pepper, chopped
    2 green onions, chopped
    1/3 c. sliced green olives
    1 (8 1/2 oz.) can artichoke hearts, chopped
    1/2 c. mayonnaise
    1/2 tsp. curry powder
Preparation
    Cook rice in broth according to directions. Cool. Add next 4 ingredients. Mix well. Add salt and pepper to taste. In small bowl, mix mayonnaise and curry powder well. Stir mayonnaise into salad, mixing well. Chill overnight. Serves 6 to 8.
