Fresh Apple Cake - cooking recipe

Ingredients
    4 c. apples, peeled and diced
    2 c. sugar over apples (let stand 1 hour, stirring occasionally)
    3 c. flour
    1/2 tsp. nutmeg or cinnamon
    1/2 tsp. salt
    2 tsp. soda
    1 c. vegetable oil
    1 tsp. vanilla
    2 eggs, beaten
Preparation
    Add dry ingredients to apple mixture.
    Add oil, vanilla and eggs.
    Pour into greased pan.
    Bake 1 hour and 15 minutes at 350\u00b0. Apple mixture is first 2 ingredients (apples and sugar).
    This is also good made with fresh pears.
