Molded Cucumber Salad - cooking recipe
Ingredients

3/4 c. grated cucumber with rind, drained
3/4 c. cucumber juice
1 (3 oz.) pkg. lime jello
1 c. each: mayonnaise and cream-style small curd cottage cheese
1/2 c. chopped pecans
2 Tbsp. grated onion
1/2 tsp. salt
Preparation

Grate enough cucumber, rind and all, to measure 3/4 cup. Drain thoroughly and save juice for liquid in jello.
Add water to make 3/4 cup.
Heat to boiling; remove and stir in jello until dissolved.
Chill until partly thickened.
Blend in mayo with wire whisk.
Fold in cottage cheese, cucumber, pecans, onion and salt. Can be 6 individual molds or in large mold or bowl.
