Stuffed Potato Skins - cooking recipe

Ingredients
    3 (12 oz.) baked potatoes
    1 Tbsp. vegetable oil
    1 onion, chopped
    1 green pepper, chopped
    1 c. shredded Jack or Cheddar cheese
    1 tsp. paprika
    salt and pepper to taste
Preparation
    Heat the butter in a large nonstick skillet. Add the onion and a little salt and cook over medium heat until softened, about 5 minutes. Add the bell pepper and continue to cook until just tender, but still
    crunchy, about 2 to 3 minutes. Stir in paprika and set aside. Cut the potatoes in half lengthwise and scoop out the flesh, keeping the pieces coarse. Keep the skins warm.
