Ingredients

1 c. all-purpose flour
1 Tbsp. oil
2/3 c. water
1/4 tsp. salt
sweetened ice water
large Bermuda onions
1 egg white, beaten
Preparation

Slice onions 1/8-inch thick, using only large middle slices. Separate rings and cover with ice water (about 1 tablespoon of sugar to a bowl of ice water).
Let stand 2 hours.
Drain and wipe dry.
Combine flour, salt and the 2/3 cup water.
Add oil and fold in beaten egg whites.
Dip each onion ring in the batter and fry in deep, hot oil until golden brown.
Drain on paper towel. Sprinkle with salt.
