Eggplant Dressing - cooking recipe

Ingredients
    medium eggplant
    1 1/2 tsp. salt
    1 tsp. sage
    cornbread
    1 chopped onion
    1 sweet bell pepper
    1 c. grated cheese
    2 eggs
Preparation
    Peel and dice 2 medium eggplants in saucepan.
    Cover with water; add 1 1/2 teaspoons salt and 1 teaspoon sage.
    Cook until tender, about 5 minutes, in baking pan.
    Mix cornbread, 1 chopped onion, 1 sweet bell pepper and 1 cup grated cheese.
    Pour eggplants and liquids over; stir to mix well.
    Add 2 beaten eggs; stir again.
    Sprinkle 1 cup grated cheese over top.
    Bake in 350\u00b0 oven 1/2 to 1 hour until cheese has melted well.
