Fasolatha(Bean Soup) - cooking recipe

Ingredients
    2 c. beans (dried Northern)
    1 1/2 c. finely chopped onions
    1 c. finely chopped celery with some of the leaves (scrape celery of strings)
    2 carrots, sliced in thin slices
    2 Tbsp. chopped parsley
    2 cloves garlic, cut in half
    1 c. canned tomatoes, mashed
    3/4 c. olive oil
    2 tsp. salt
    some pepper
    2 to 3 Tbsp. chicken bouillon base (to your taste)
    2 potatoes, quartered long ways, then cubed
Preparation
    Soak beans
    in\tcold water overnight.
    If you forget to do this, then\tcover beans with water; let them come to a boil for about 2
    minutes.
    Take
    off
    fire\tand cover beans for an hour. Drain; rinse beans and make soup.
