Southern Stew - cooking recipe

Ingredients
    2 lb. smoked ham
    1 1/2 c. chopped onion
    2 cloves garlic, minced
    3 Tbsp. shortening
    1/2 c. minced green pepper
    1/2 lemon, cut in 2 wedges
    1/2 tsp. pepper
    1/4 tsp. thyme
    1 (16 oz.) can tomato
    1 c. uncooked rice
    1 1/2 c. hot water
Preparation
    Cut ham into 1/2 inch
    cubes and set aside.
    Cook onion and garlic in shortening until tender.
    Add ham and brown lightly; pour off drippings.
    Add green pepper, lemon, pepper, thyme, tomatoes, rice and water.
    Cover tightly and simmer 25 or 30 minutes or until rice is fluffy.
    Yields 10 servings.
