Creole Liver - cooking recipe

Ingredients
    1 lb. liver, sliced
    1/2 c. fat
    1 medium onion, minced
    1 bell pepper, minced
    1/2 c. water
    1 (No. 2) can tomatoes
    1 tsp. salt
    1/2 tsp. pepper
    1/8 tsp. garlic salt
Preparation
    Brown flour dredged in liver fat.
    Remove.
    Saute onion and bell pepper in
    remaining fat until tender.
    Pour off any excess fat.
    Add liver, tomatoes, water and seasonings to onion and pepper.
    Simmer, covered, 30 minutes.
    Add extra water, if needed, while simmering.
    Serves 6.
