Calabasa(Mexican Stew) - cooking recipe

Ingredients
    1 to 2 lb. pork, cubed (can use roast, chops, steak, etc.)
    3 to 4 zucchini (yellow squash can be used)
    1 large onion, chopped
    1 to 2 large cans tomatoes
    1 to 2 Tbsp. cumin
Preparation
    Boil cubed pork in lightly salted water for about 30 minutes. Drain.
    Add canned tomatoes, squash and onion; simmer until vegetables are tender, about 20 minutes.
    Add cumin, salt and pepper to taste.
    (Can serve with warmed tortillas or rice.)
