Ingredients

1 c. sugar
2 eggs
3 Tbsp. cornstarch
1 tsp. vanilla
2 c. milk
1 c. coconut
Preparation

Combine sugar and cornstarch together.
Add eggs, milk and vanilla.
Cook over low heat until mixture thickens.
Stir in coconut.
Pour into baked pie shell.
Chill.
Top with Cool Whip or meringue.
You can also cook in microwave.
