Zucchini Casserole - cooking recipe

Ingredients
    1/2 pkg. seasoned stuffing mix
    1/3 c. melted oleo
    3 c. zucchini, grated
    2 c. grated carrots
    1 onion, finely chopped
    1 can cream of chicken soup, undiluted
    1/2 c. sour cream or yogurt
    1 c. grated Cheddar cheese
Preparation
    Mix stuffing with oleo; cook zucchini slightly and drain well. Combine zucchini, half the stuffing mixture, carrots, onion, soup and sour cream.
    Place in lightly greased baking dish. Sprinkle other half of stuffing mixture over top.
    Sprinkle with grated cheese.
    Bake at 350\u00b0 for 25 minutes.
