"Bilodi" Black-Eyed Pea Salad - cooking recipe

Ingredients
    1 lb. dried black-eyed peas
    2 c. Italian salad dressing
    1 c. diced green bell pepper
    1 1/2 c. diced onion
    1 c. finely diced green onion
    3 oz. drained pimento
    garlic salt and pepper to taste
    1/2 c. finely seeded jalapeno pepper (optional)
Preparation
    Soak peas 6 hours, then cook with fresh water 45 minutes. (Optional:
    Use 1 pound canned black-eyed peas, drained.) After draining black-eyed peas, add all other ingredients except dressing.
    Toss well, then add dressing.
    Toss lightly.
    Chill. Makes about 7 cups.
