Penne Ala Caprese - cooking recipe
Ingredients

1 large tomato, diced
2 to 3 Tbsp. fresh basil or 2 tsp. dried basil
2 garlic cloves, peeled and minced
olive oil to cover
1 lb. penne rigate or rigatoni
3/4 lb. grated Mozzarella cheese
Preparation

Mix together tomato, basil and garlic.
Add olive oil to cover.
Marinate at room temperature or in refrigerator for at least 2 hours.
Just before serving, cook penne until al dente. Drain.
Rinse with cold water.
Add small amount of olive oil to pasta and stir.
Add pasta to marinated tomato. Bring tomato to room temperature if refrigerated.
Toss with Mozzarella.
Serves 4.
