Creole Corn Casserole - cooking recipe

Ingredients
    1 1/2 c. raw rice
    1 large onion, chopped
    1 large bell pepper, chopped
    1 stick margarine
    2 cans cream-style corn
    2 eggs, beaten
    1 small jar pimientos, drained
    2 c. shredded Cheddar cheese
    Creole seasoning
Preparation
    Cook rice according to directions; set aside. Saute onion and bell pepper in margarine until tender. Remove from heat; add corn, rice, eggs, pimientos, 1 cup of the Cheddar cheese and Creole seasoning to taste. Pour into 2-quart casserole dish sprayed with Pam. Bake at 350\u00b0 for 30 to 40 minutes. Sprinkle balance of cheese on top and melt. Serves 8 to 10 people.
