Cinnamon Honey Muffins - cooking recipe

3/4 c. unprocessed bran
1 c. low-fat buttermilk
1 egg, beaten
1/4 c. honey
1/4 c. vegetable oil
1/2 c. raisins
1/2 c. grated carrots
1 1/4 c. sifted all-purpose flour
1 tsp. baking soda
1/4 tsp. salt
1 tsp. nutmeg
1/2 tsp. cinnamon
Preparation

Preheat oven to 425\u00b0.
Coat muffin pan with nonstick spray. In a medium bowl combine bran, buttermilk, egg, honey, oil, raisins and carrots.
Let stand 10 minutes.
