Scalloped Carrots And Cheese - cooking recipe

Ingredients
    12 medium carrots, peeled and sliced
    1 small onion
    1/4 c. butter or margarine
    1/4 c. flour
    1 tsp. salt
    1/4 tsp. dry mustard
    2 c. milk
    1/8 tsp. pepper
    1/4 tsp. celery salt
    1/2 lb. Old English cheese (10 slices)
    3 c. buttered bread crumbs
Preparation
    Cook carrots until barely tender, about 10 minutes.
    Drain. In a saucepan, gently cook onion in margarine 2 to 3 minutes. Stir in flour, salt and mustard, then milk, cooking and stirring until smooth.
    Add pepper and celery salt.
    In a 2-quart casserole, arrange a layer of carrots, then cheese.
    Repeat, ending with carrots.
    Pour sauce over carrots.
    Top with crumbs. Bake at 350\u00b0 for 35 to 40 minutes.
