Sausage Stuffed Acorn Squash - cooking recipe
Ingredients

2 medium acorn squash
salt
water
1 lb. bulk pork sausage
1 c. fresh bread crumbs (2 slices bread)
2 Tbsp. minced parsley
pepper
Preparation

Halve squash lengthwise; discard seeds.
Place cut side down in deep skillet in 1/2 inch of water.
Steam 15 minutes.
Drain well. Place cut side up in baking dish.
Cook sausage in skillet over medium heat, breaking up pieces with spoon until brown.
Drain off excess fat.
Stir in crumbs, parsley, 1/2 teaspoon of salt and 1/8 teaspoon of pepper.
Spoon into squash cavities, pressing down lightly.
Bake in preheated 425\u00b0 oven for 10 to 15 minutes until filling is brown and squash is heated through.
