Salsa Roja - cooking recipe

Ingredients
    5 large ripe tomatoes, diced
    1 c. chopped onion
    3 large garlic cloves, crushed
    1 tsp. salt
    2 to 4 Tbsp. dry sherry (optional)
    1/2 c. chopped green chilies, canned
    1/4 to 1/2 tsp. cayenne
    1/2 to 1 tsp. ground cumin
    minced parsley, basil and chives to taste
Preparation
    Combine all ingredients except parsley, basil and chives in a saucepan.
    Bring to a boil, lower the heat and cover.
    Simmer for 40 to 50 minutes.
    Add minced herbs to taste.
