Ricotta Doughnuts - cooking recipe

Ingredients
    1 lb. Ricotta (whole milk)
    5 eggs
    5 Tbsp. sugar
    1 tsp. vanilla
    2 c. flour
    pinch of salt
    4 tsp. baking powder
    2 c. oil for frying
    confectioners sugar
Preparation
    Soften Ricotta cheese.\tBeat the eggs into the Ricotta. Add sugar, vanilla,
    flour, salt and baking powder;
    mix well. Heat oil.
    Place
    dough by teaspoonfuls in hot oil.
    Fry until golden brown
    (approximately
    3 minutes).\tRemove with slotted spoon. Drain on paper towels.
    Cool and roll in confectioners sugar.
