Mexican Rice Pilaf - cooking recipe

Ingredients
    1 medium onion, chopped
    2 cloves garlic, minced
    2 c. rice, uncooked (Uncle Ben's converted long grain, not instant rice)
    1/2 c. thick salsa
    2 Tbsp. olive oil
    1/4 tsp. cumin
    1/2 c. water
    2 c. cheddar cheese
    1 can (16 oz.) diced tomatoes
    2 c. cooked meat, hamburger or chicken
    1 (14 oz.) can broth, beef or broth
Preparation
    Saute onion in oil. Add garlic, cumin and rice. Cook 3 minutes on medium heat. Add meat and remaining ingredients except cheese. Bring to a boil. Cover and bake at 350\u00b0 for 25 minutes or until rice is soft. Sprinkle with cheese and heat uncovered in oven for 5 minutes or until cheese is melted.
